Creamy Cilantro Lime Dressing

Rich and full of flavor, while completely dairy free!

Homemade dressing sounds a little daunting at first. When store bought dressing requires absolutely no work, it can be hard to resist. Well, I’m  here to show you it’s really not that bad, and the little work it takes is completely worth the benefits!

I try to eat salads year round, but easily slack during the cold winter months; as spring begins to poke it’s head, I begin to crave fresh, leafy, and crisp salads daily! We all know salads are amazing for your waistline and general health because of all the beautiful raw ingredients and their wonderful nutrients and benefits. But, my biggest beef with salad is the dressing. It’s really not worth eating the salad when it’s piled with fat, sugar, sodium and other unnecessary additives seen in store bought dressings.

I started making my own salad dressing over six months ago, and won’t switch back! All you need is a blender, or small food processor, a couple fresh ingredients and viola! This particular dressing has minimal ingredients but tons of flavor and only takes a short amount of time. The dressing will keep for up to one week, and is plenty to serve two over the span.  I look forward to sharing more of my dressings with you soon!

Ingredients:

  • Juice of 3 Limes
  • Zest of 2 Limes
  • 1 cup Fresh Cilantro
  • 1/2 Zucchini, peeled and diced (1 cup)
  • 1 Garlic Clove
  • Salt & Pepper, to taste
  • Water

Prep Time: 15 minutes

How to Make It:

1. Start by peeling and dicing half of a zucchini, then place it in a bowl and cover it with water and a little salt. Set aside for a good 10 to 15 minutes. Zucchini is very porous and will soak up a lot of water this helps your dressing from thickening over time in the fridge. In the case it does thicken past a consistency you enjoy, simply add water to the final dressing as needed throughout use.

2. In a small food processor or blender, place your peeled garlic, lime juice and zest, fresh cilantro and drained zucchini.

3. Blend well and add water as needed to adjust consistency to desired thickness.

Serve over your favorite salad and enjoy!
