A little rum takes these patriotic popsicles to the next level!
I recently bought a popsicle mold (so inexpensive) and have been itching to make some boozy popsicles, aka booze-cicles! Since it arrived just in time for the 4th I figured it was necessary to make some red white and blue ones!
They make me think of the red, white and blue popsicles I used to eat as a kid, though now they are much more adult. I used rum because I figured the sweetness would go well in the popsicle. It’s really pretty simple to do, but I’ll be honest, I probably won’t be making layered popsicles again anytime soon. I don’t have the patience to let each color freeze before adding the next. But I can’t wait to have these on the 4th and make more popsicles in the future!
I thought it was convenient to use these Jone’s sodas because they both are pretty vibrantly red and blue!
The Innards:
- Citrus flavored Rum
- Blue Soda
- Red Soda
- Lemon Lime Soda
- Fresh Lemon Juice (optional)
- Popsicle Mold
Serves: 10+
How to make Booze-cicles:
1. Mix 1oz of rum to 2 1/2 cups blue soda in a pitcher. (It’s very important not to add extra booze, tempting as it may be or they will never freeze)
2. Fill 1/3 of your popsicle mold with the blue mixture, and place in the freezer for 1 hour, when it starts to look slushy, place your popsicle sticks in them, this way they are not at the bottom. Then put back in freezer another hour.
3. Mix the same ratio of rum to lemon/lime soda and add fresh lemon juice if you like.
4. If the blue layer looks frozen go ahead and fill the next 1/3 full of your lemon lime soda mix.
5. Let freeze for another 2-3 hours.
6. Make the same ratio of rum to red soda and when the clear/white layer looks frozen add the red mix and freeze the pops over night.
I found plastic “lollipop” bags at the craft store and cute a small hole in the bottom corner for the popsicle stick then tied them up with festive ribbon.
