Artichokes, white wine, and lemon give this healthy chicken layers of flavor!
My previous post was for a Lemon and Dill Couscous dish that we served last weekend at a small backyard dinner, this is the main dish we served. My friend Carter and I planned a wonderful Mediterranean themed dinner and I was in charge of the chicken.
I wanted to marinade and grill the chicken with the nice weather. I decided wine and artichokes would be my main inspiration with lemon and fresh herbs to add flavor. I chose a Pinot Grigio which is a white wine on the sweeter side which I thought helped to balance the salty and savory flavor of the artichokes.
The Innards:
- 6 Chicken Breasts
- 1 cup White Wine
- 1 1/2 – 15 oz cans small Artichoke Hearts, quartered
- 1 Lemon zest and juiced
- 2 TBSP fresh Basil, chopped
- 3 TBSP fresh Oregano, chopped
- 1 TBSP Olive Oil
- S+P
Prep Time: 4-6 hours (marinade time)
Cook Time: 20 minutes
Serves: 6
Calories per Serving: 220, Fat: 6, Carbs: 8, Protein: 25
How to Make it:
1. Chop your artichoke hearts and combine with all other ingredients over your raw chicken and let marinade for at least 4 hours.
2. When ready to grill, place your chicken on a hot grill and baste with some of the marinade.
3. Reserve the artichokes and the remaining marinade, place in a small sauce pan and bring to a simmer for at least 10 minutes, or as long as it takes the chicken to cook.
Serve the chicken topped with the cooked artichoke heart marinade.
