The Lean Green Machine

Low Calorie, full of protein, electrolytes, essential vitamins and nutrients (more than most get in a week) it makes for a great post-workout treat!

I previously did a post based on Kimberly Snyder’s Glowing Green Smoothie recipe and I love that smoothie! I literally drink one spinach smoothie a day! I’m not lying to you when I say my skin literally cleared up in one week of drinking these bad boys!! I never had outrageous acne but now it is rare if I get any at all!! It’s such a simple way to clear your skin without using harsh chemical facial products! Plus it gives you your daily serving of fruits and vegetables, and more servings of dark leafy greens than most people eat in one week! This smoothie is perfect if it is hard for you to always be on top of eating your veggies and fruits!

You might think it is expensive to have one of these bad boys every day, but I go to costco for my produce which is all organic, and then I make a number of batches and freeze them in mason jars! I have a half a mason jar every day, they will last in your fridge 2 days! So I’m not spending every day making one and the produce I buy for them doesn’t go bad!

I decided to make this new recipe of the smoothie because I am doing the Tough Mudder (a 12 mile obstacle race) in one week and wanted a little extra protein in my smoothie. This makes for the perfect pre or post workout smoothie! Not only will you get all of the great vitamins and nutrients from the produce, I decided to change the recipe by using coconut water instead for all of the natural potassium and hydrating effects it has, as well as add greek yogurt for an extra boost of protein that will keep you full until your next meal! Though it does have a higher carb content, they are all good carbs that come from the fruit and veggies and will give you energy! The yogurt makes the smoothie extra smooth so I am really loving this one! Feel free to mix up your ingredients by using different dark greens than spinach such as kale, and of course mix up your fruit but avoid melons.

The Innards:

  • 5 cups Spinach
  • 1 Romaine Heart, chopped
  • 1 Apple, chopped and cored
  • 1 Peach, chopped and cored
  • 1 Banana, peeled
  • 1 cup coconut water
  • 3/4 cup Non-fat Vanilla Greek Yogurt
  • Juice of 1/2 lemon

Serves: 2

Cook Time: 10 minutes

Calories Per Serving (1/2): 236, Fat: 0, Carbs: 40, Protein: 14

How to make it:

1. Chop up your romaine lettuce and place in your blender with the coconut water, start blending.

2. Add your spinach and blend everythign on the highest speed until smooth.

3. Add your apple, peach, banana a few chunks at a time.

4. Add the lemon juice and yogurt and blend well.

5. For easy storage place in mason jars and freeze!

Thaw the night before and enjoy!
